Gastronomy, drama, art, and spectacular visuals blend to create the Alchemist universe. A fine dining experience is the core of the restaurant – but keeping with Head Chef Rasmus Munk’s idea of Holistic Cuisine the menu of 45–50 edible impressions are augmented by performers, installations, and the architecture itself.
The heart of the restaurant consists of a gigantic planetarium dome where guests dine surrounded by artful projections and stunning views, conjuring up, and enhancing moods and statements.
The guests find themselves under the sea surrounded by jellyfish floating among plastic bags, in space looking down on the earth and inside the human body – finding themselves calming down in time with the slow beating of a gigantic heart.
Most of the drama at Alchemist happens on the plates, where layers of subtext, both humorous, provocative, political and just plain delicious, line the six hour experience.
Two sensory rooms are regularly changed and are filled with surprising interactive performance elements – and two lounge areas give pause and time for reflection during the evening.

Holistic cuisine is per definition multi-layered. It draws upon elements from the world of gastronomy, theatre and art, as well as science, technology and design, in order to create an all-encompassing and dramaturgically driven sensory experience.
Flavour, high quality ingredients, skillful preparation and the process of eating forms the foundation, but the experience is designed to extend beyond the plate, seeping into both the immediate physical surroundings as well as transcending time and space – where it
is likely to initiate and support the debate on social and ethical issues.
Chef Rasmus Munk
Rasmus Munk was born in 1991 in the town of Randers in Jutland, Denmark.
His career took off when he was 22 and was appointed Head Chef at Treetop in Vejle – where he started combining ingredients, textures, and flavors in new ways, which ultimately led to the opening of the first Alchemist in Copenhagen in 2015.
In 2019, after two years of building, a new incarnation of Alchemist opened in an old shipyard in industrial district of Refshaleøen. Here Munk could realize his dream and vision of “Holistic Cuisine” where art and performance augment the dining experience. Munk’s thought provoking, surprising and humoristic gastronomy is often orchestrated to initiate and support debate on social and ethical issues.
