The Samura Okinawa Yanagiba
(Japanese for “willow-leaf blade”) is a traditional Japanese kitchen knife which is suitable for professional use. The blade is made of AUS-8 steel. This originally Japanese type of steel is known for its toughness and sharpness retention. Because the blade is ground hollow, no products will stick to the knife.
The handle is made of wood in combination with plastic and has a flattened part so that it fits nicer in the hand.
The Yanagiba is used for filleting fish and preparing sushi and sashimi. The knife will last longest if it is not cleaned in the dishwasher.
